Restaurant Supervision- Den - Zaiyu Hasegawa
Born in Tokyo in 1978. After training at the long-established kappo restaurant Uotoku, he opened Den in Jimbocho in 2007. In just its third year, it earned two stars in the MICHELIN Guide Tokyo 2011. In 2018, it ranked No. 1 in Asia’s 50 Best Restaurants and No. 11 in The World’s 50 Best Restaurants. While cherishing abundant ingredients and Japan’s unique culture, he embodies “a new form of Japanese cuisine” filled with playfulness and a spirit of hospitality. Through collaboration events with chefs from around the world, he shares his vision globally.
